Justin has worked some of the country’s most notable restaurants such as *17 in Houston, Texas, Green Zebra and Spring Restaurants in Chicago, Illinios and Ubuntu in Napa, California. After staging abroad at In de Wulf in Dranouter, Belgium and AOC and Geranium Restaurants in Copenhagen, Denmark, Justin came back to Houston to open Oxheart to convey a progressive perspective on regional product. In his free time, Justin enjoys hamburgers, traveling, money cats and making side bets on fantasy football leagues.
Karen studied Economics at The University of Texas in Austin. A couple of years into a Corporate lifestyle, she found herself needing to use her hands to express herself. Since attending The French Pastry School in Chicago, she has worked in Napa and New York and staged in Copenhagen (Denmark), Dranouter (Belgium), and Gent (Belgium).
When she isn’t baking, Karen trains with her sister who is an ironman, hosts dinner parties, tries her hand at smoking meats, drinks tea, and eats pies. Check out her book, The Art of Baking: Oxheart at bread.blog.
